Plant based foods are now ubiquitous. Inventive and creative chefs are attuned to this creating exciting and delicious offerings to stimulate and awaken one’s palate. We have crafted a menu that meets this standard, without sacrificing some of the more traditional flavors that we associate with the Thanksgiving holiday.
In lieu of the classic centerpiece of a turkey, we’ve come up with a real showstopper to present and carve at the table!
Drum roll please... both dramatic and delicious… a Whole Roasted Head of Cauliflower! We season it herbaceously (shall we say dry-brined, perhaps?) with bright and intriguing notes and serve it alongside contemporary interpretations of holiday favorites. A dressing of brioche studded with leeks and parsnips is enriched with cream, silken mashed potatoes are seductive with extra-virgin olive oil, and baby, we’ve got The Best Damn Biscuits for YOU! Tender, flaky, and warm from the oven, they are a delicate delight. And there is much, much more! (The menu, in its entirety, may be found at the end of this post…)
Aesthetically, we’ve set a simple but bold tableaux.

Chartreuse and citrine bring a new vibrancy, and signal that the feast is something special and unique. Adding to levels of texture established by the linens, the oversize rectangular plates are pebbled to subtly reflect ambient light.
The flatware is matte finished, clean-lined, soft gold, and casually set upon in a barely ironed Belgian linen napkin.

Visually warming is the centerpiece of simple white votives in straight sided clear glass holders, which allow the elegant light to bounce and refract through the forest of spotless crystal stemware. (as we have entered a time where everyone is a novice oenophile, we’ve set glasses for both reds and whites, something bubbly... as well as pure unadulterated H20.)
